This recipe comes from mother of one of my blog readers, Michele.
I made a few small adjustments to the original spec and they turned out amazing! I love the texture that lays somewhere between a biscuit and a macaron, dead easy to make and super delicious to snack on while watching your favourite movie on the sofa.
The only thing you gonna need is a cup of tea or coffee :)

Portion size: Makes around 24 cookies
Preparation time: 30-40 minutes (including dough resting time)
Baking time: 10 minutes
250g of plain flour (works with gluten-free flour as well)
100g of ground almonds
pinch of salt
2tsp of baking powder
200g of caster/granulated sugar
100g of butter (room temperature)
2 large eggs
2tsp of vanilla bean paste
icing sugar for dusting
Sieve plain flour into a standing mixer bowl and add all the remaining ingredients, mix everything together until you reach a uniform cookie dough.
Transfer ready dough onto a plate and place it inside the refrigerator to bring down its temperature (around 20-30 minutes)
Preheat the fan oven to 180C (350F).
Pinch a tablespoon of the dough and roll in your hands to form a ball then flatten and place on a non-stick baking tray.
Bake cookies for around 10 minutes then allow to cool down before removing them from the tray.
Once cooled, dust with icing sugar.
Try to use other ground nuts instead of almonds or use coconut to make it nut-free.
