Avocado & Papaya Salsa

This delicious salsa is a perfect addition to many Mexican dishes and super easy to make! Try with my amazing Chilli non-Carne with Quorn & Roasted peppers!

Ingredients:
- 2 medium ripe avocados, peeled and cut in quarters 
- 1 small ripe papaya, peeled, seeds removed and diced 
- 1 medium red onion, peeled and diced 
- 1 garlic clove minced 
- 2 medium ripe and sweet tomatoes diced 
- 1 large lime juiced 
- 1tbsp green tabasco 
- 5g (0,17oz) chopped parsley 
- 0,5 tsp of black pepper 
- 0,5 tsp of salt 
Instructions:
- In the medium bowl, mix the diced red onion with salt and lime juice then leave it for 15 minutes to soften the onions. 
- In the meantime blend one avocado into a paste with 1tbsp of olive oil (If you don't have a small food processor you can mash it instead) 
- Dice another avocado, papaya and tomatoes then fold into the onions. 
- Add blended avocado, garlic, parsley and green tabasco. 
- Bring all the ingredients together and check the seasoning, salsa should be sweet-sour and slightly salty.
