Avocado & Papaya Salsa

This delicious salsa is a perfect addition to many Mexican dishes and super easy to make! Try with my amazing Chilli non-Carne with Quorn & Roasted peppers!

Ingredients:


  • 2 medium ripe avocados, peeled and cut in quarters

  • 1 small ripe papaya, peeled, seeds removed and diced

  • 1 medium red onion, peeled and diced

  • 1 garlic clove minced

  • 2 medium ripe and sweet tomatoes diced

  • 1 large lime juiced

  • 1tbsp green tabasco

  • 5g (0,17oz) chopped parsley

  • 0,5 tsp of black pepper

  • 0,5 tsp of salt


Instructions:


  1. In the medium bowl, mix the diced red onion with salt and lime juice then leave it for 15 minutes to soften the onions.

  2. In the meantime blend one avocado into a paste with 1tbsp of olive oil (If you don't have a small food processor you can mash it instead)

  3. Dice another avocado, papaya and tomatoes then fold into the onions.

  4. Add blended avocado, garlic, parsley and green tabasco.

  5. Bring all the ingredients together and check the seasoning, salsa should be sweet-sour and slightly salty.
